Eating Healthy

Alright, the leaves are coming in and the flowers start blooming and our rabbit family is back in business!!! No veggie garden for me this year because I don't like sharing my veggies with the squirrel and the rabbits!
One morning we saw these two rabbits munching away in our yard. (One is under the bush)
FR my neighbor Delores invited me and a friend of hers over for lunch because she met a german Lady at a birthday party and she wanted me to meet her. It was a fun lunch and I made this yummi 'Weincreme Torte' for desert. The German Lady didn't like the 'coffee and cake sessions' in Germany and that was the first thing she got rid of when she moved here 20 years ago. Alright then, but I love it and she ate my cake :).
A fun afternoon with my munchkins at the Greenfield Village, we had so much fun... really enjoy hanging out with these two way to fast growing kids of ours





This one made me crack up so much... hahaha...
My 'diet' is going very well... the whole reason of eating healthy and maybe loosing a couple of inches is now totally a side effect for me. I have soooo much fun preparing my meals and choose different ones. I really look forward to my meal times... it's so much fun and the side effect of it being so healthy and doing something wonderful for my body is just so great. This snack was out of this world. I would've never thought of this combination myself... sometimes you just have to get some fresh ideas again to spice up your life :)... I totally am hooked on this diet and love every bite of it :)
This was my lunch today with shrimp, eggplant, red peppers, brown rice, mushrooms... OMG... and my dinner last night was... oh man... I actually think Frank might've liked that dinner...
I ordered a book with 85 recipes that are within the guidelines of the '20 20 diet' and I'm super thrilled to start trying those out as well but I still have a ton of recipes to explore alone on my app :). So I won't get bored for a while. I guess I found my new hobby :)... hihihi...

Summer is on the way

Well, after I got to spend at least an hour all by myself before anybody got out of their rooms on Mothersday I got another sweet surprise from my hubby :). I wanted to buy this apple watch for at least half a year now but somehow I never got to save money for it or when I had it, the windshield needed to be replaced and then Christmas came along and birthday parties... the long wait had an end... here is my awesome new watch and I totally LOVE it :). Thanks Babe :)

Henry's swim class. He has class now on Monday Nights and Zoe is in the swim club and can swim MON, WED and THU nights if she wants to! I have no clue why I instigated this... *hahaha*... but school is almost over and the school drop off and pick ups finally fall off the schedule and it'll be a bit more relaxing for us.

Another yummy yummy recipe... I really love all these new recipes and I totally enjoy trying them out. Today is already my last day in phase 2 and tomorrow I get to try out soooo many more new recipes. I'm thrilled...
After baking cookies for Dustin's school (last session of ESL class) Henry was eagerly licking off the leftovers *lol*...

Baking a cake for lunch tomorrow. My neighbor met a german lady at a party and she wants me to meet her so she invited her over for lunch tomorrow and I'll bring desert :)... Weincreme Torte :)... I guess I have to make a little exception to my new diet restrictions... once won't hurt...

Happy Mothersday

First of all... Happy Mothersday to all the amazing Moms out there. For having the toughest job but yet most rewarding and most important as well :). Never a dull moment and lots of fun and joyful days behind us and ahead of us :)... 

Big news this week... I changed my diet. It was quite a spontaneous thing but I totally fell in love with it and the results are AMAZING. Alone in the first 5 days (the cleaning phase) I lost 5 lbs and 3.5 % body fat!!! And I'm not big I would say so that's a huge number. I feel great and I really look forward to each new meal that I get to explore and try. I have to cook two meals now because my family wouldn't touch these meals except Dustin :). He enjoys my new breakfast meals that I make for him too and once he finishes school he'll try out more of the plans recipe as well. It's a bit tricky because you have to eat every 4 hrs and even I am not able to manage it because I'm mostly not at home hat the 'eating time slots' so I got creative and started preparing my lunch before heading out for the day and eat when I'm out and about but the healthy option. 

Here is a Walnut Lentil Salad, that was super delicious and so filling, I couldn't even eat the whole plate at one time!!!
My coffee is made with only half a teaspoon of coconut oil (jup... weird but look how amazing it looks) and you mix it in a blender, add a bit of Almond milk, mix again and this amazing looking coffee comes out and I totally enjoy this fancy coffee. I had to admit. I was drinking A LOT OF COFFEE before starting this diet and I am only allowed to drink one 8oz coffee (this style) a day. No milk no creamer :(... but I totally enjoy my one (little bigger cup than 8oz) a day but I sure had some headaches from the caffeine withdraw during the days :(... now I'm fine

Spinach Scramble, umm that was good too. Even Frank came downstairs and asked what the yummy smell was but he wouldn't eat it though *lol*
Meanwhile this is what my family eats. Loaded Ziti, lots of Mozzarella Cheese and Ricotta... I have the feeling that my smell senses have increased even though they've been always really good but wow... I was just smelling this amazing dish and I felt like I ate a piece *lol*... only me *lol*...
Well, I really enjoy this new journey and the reward is so rewarding that it's hard to say no to it anyway :). Now I'm off to a Sunday Funday I guess... just chilling and seeing what they day will bring. We got a huge trampoline for the kids, hopefully I'll be able to assemble it later today so the kids can start enjoying it and burn out some energy...
